Silicone Baking Moulds: How to Avoid Soggy Bottoms and Stuck Bakes

Silicone moulds promise the two things metal tins struggle with: intricate shapes and effortless release. Then the first batch comes out and the tops look right while the bottoms are pale, damp and slightly gummy. Nothing is wrong with the mould. Silicone simply moves heat in a completely different way to metal, and most recipes are written assuming metal. Once you understand that one difference, the fixes are quick and permanent.

Why silicone bakes differently to metal

Metal tins work by conduction. Aluminium conducts heat at roughly 200 watts per metre-kelvin, so the tin wall heats almost instantly and drives energy straight into the batter touching it. That aggressive contact heat is what sets a crust and browns a base. Silicone conducts at around 0.2 watts per metre-kelvin — about a thousandth as well. It is effectively an insulator, which is exactly why you can grab a hot mould with bare fingertips and why it will never brown a base the way a dark metal tin does.

Silicone bakes almost entirely by radiant and convected oven air rather than contact. The top and sides of your cake cook normally because hot air circulates around them. The bottom, sitting against an insulating wall on a wire rack in still air, receives far less energy. The batter there still cooks through, but it steams rather than bakes, and moisture that would have evaporated through a browning crust stays put. That is your soggy bottom. It is a heat delivery problem, not a recipe problem.

This is why silicone shines for small, high-detail work — chocolates, jellies, set desserts, individual cakes — where release matters more than crust. Shaped moulds hold crisp detail that metal cannot reproduce, and the finished piece pops out without chipping.

The four fixes for a pale, damp bottom

Preheat a metal tray and bake the mould on it. This is the single biggest improvement. Put a flat baking tray in the oven while it preheats, then set the filled mould directly onto the hot metal. The tray delivers the contact heat the silicone cannot, and you get a base that sets and lightly colours instead of steaming. Never place a cold mould on a cold tray and expect the same result — the tray must be up to temperature.

Move the rack down. Most fan ovens have their strongest bottom heat one rung below centre. In a conventional oven, the lower third puts the mould closer to the element. Combined with a preheated tray, this usually resolves the problem entirely.

Add ten to fifteen per cent to the bake time, not the temperature. Silicone slows heat transfer, so the interior reaches temperature later. Raising the oven temperature just overcooks the top before the base catches up. Extend time instead and check with a skewer through the deepest point.

Turn the bake out promptly. Leaving a cake to cool inside a silicone mould traps steam against the base with nowhere to go, undoing everything you fixed. Rest for five minutes so the structure sets, then peel the mould back and move the cake to a wire rack.

Choosing a mould that actually performs

Thickness matters more than shape. A thin, floppy mould will slump the moment it holds batter, distorting the shape and making the walls contact each other. A good mould holds its form when you lift it filled. Press the wall between two fingers — it should feel dense and springy rather than papery.

Check that it is described as food grade. The pinch test is a rough field check: twist a corner hard and if the silicone turns white, it likely contains filler rather than being pure silicone. Filled silicone is the material most likely to hold odours and stain. A faint chemical smell on a new mould is normal; bake it empty at 180°C for fifteen minutes before first use and it should disappear.

Cavity depth changes the outcome as much as the shape does. Shallow, detailed cavities set fast and release cleanly, which is why they suit chocolate, jelly, caramel and small candy. Deep cavities behave more like a small cake tin and need the preheated tray treatment. Getting things out cleanly

Silicone releases well, but not magically. Batters high in sugar and low in fat — sponges, muffins, anything with honey or golden syrup — still grip. A very light brush of neutral oil, wiped almost dry, is enough. Avoid aerosol sprays containing lecithin: they leave a sticky varnish on silicone that builds up over time and eventually makes release worse, not better.

Release from the outside in. Peel the wall of the cavity away from the bake to break the seal, then push gently from underneath with a thumb. Pulling at the cake itself tears it. Chill first for anything set rather than baked — twenty minutes in the fridge firms chocolate and caramel so it drops out in one clean piece.

Use flexible tools for scraping and lifting. Silicone spatulas will not scratch or cut the mould, and a narrow slotted one is far better than a knife for sliding under a brownie or lifting a small cake without cracking it.

Supporting and moving a flexible mould

The other classic silicone failure has nothing to do with baking: the mould flexes as you carry it and the batter sloshes. Always place the mould on a rigid tray before you fill it, and move the tray, never the mould. This solves the transport problem and gives you the base heat at the same time, so there is no reason not to do it.

Be careful about what silicone does to your sense of temperature. Because it conducts so poorly, the rim of a mould can feel merely warm while the contents are at 180°C. People get burnt reaching for what feels like a cool edge and then contacting the tray beneath it. When a cutter beats a mould

Moulds shape wet mixtures. For anything stiff enough to roll — biscuit dough, shortbread, gingerbread, fondant — a cutter or stamp gives sharper edges and bakes on open metal, which sidesteps the base heat problem completely. Chill rolled dough for twenty minutes before cutting; warm dough distorts as you lift it and the detail rounds off in the oven.

Cleaning, storing and transporting

Silicone is dishwasher safe but does not come out of a dishwasher genuinely clean when it is greasy — oil residue survives the cycle and leaves a tacky film that attracts dust and eventually turns rancid. Wash by hand in water as hot as you can stand with a proper degreasing detergent, and if a film has already built up, bake the empty mould at 180°C for fifteen minutes to carbonise it, then scrub once cool.

Store moulds flat or loosely rolled, never crushed under heavy tins. Silicone takes a permanent set from long-term compression, and a mould with a kinked cavity will never cast cleanly again. Keep food moulds separate from any used for candles, soap or resin — silicone is porous enough to retain fragrance oils and pigments, and those should never share a cavity with something you plan to eat.

Common questions

Do I need to grease a silicone mould?

For chocolate, jelly and set desserts, no — greasing actually dulls the surface finish. For baked goods, a very light wipe of neutral oil helps, particularly with lean, sugary batters like sponge and muffin mixes. Skip aerosol sprays with lecithin, which polymerise onto silicone and build a sticky residue that gets harder to remove with each use.

Why does my mould smell after baking savoury food?

Silicone is slightly porous and absorbs volatile aromatic compounds, especially from garlic, curry spices and onion. Soak in a solution of bicarbonate of soda and hot water for an hour, then bake dry and empty at 180°C for fifteen minutes. Cheaper filled silicone holds odour far more stubbornly, which is a practical argument for buying a denser mould.

Can I put a silicone mould straight from the freezer into the oven?

Yes. Silicone has an unusually wide working range, roughly −40°C up to about 220°C, and does not become brittle when frozen or crack from thermal shock the way glass or ceramic can. Just remember the mould itself will not shatter, but a very cold batter still needs longer in the oven.

Can I cut something inside a silicone mould?

No. A knife blade nicks the surface, and once a cavity wall is cut it will tear along that line and leak. Turn the bake out first and cut it on a board. If you need to loosen an edge, use a silicone or plastic tool rather than metal.
